Ingredients:
Serves 4 pax

150g of egg tofu
5g of sliced young ginger
3 shallots - quartered
3 cloves of chopped garlic
2 Chinese dried mushrooms - rehydrated & sliced
100g of minced meat
1/2 tablespoon of fermented bean paste (tao cheou)
40g of sliced carrots
2 cups of water
2 tablespoons of light soy sauce
1/2 teaspoon of chicken stock powder
1/2 teaspoon of sugar
50g of sweet peas
150g of cauliflower
180g of prawns
A few dashes of white pepper
Some cornstarch solution
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)
1 beaten egg
1 teaspoon of sesame oil
Some chopped spring onion
